Gravy made from rabbit hearts

Rabbit hearts gravy is a dish that combines the tenderness of meat with the rich flavor of vegetables and a light smoky note of smoked paprika. It will be a great addition to a home-cooked meal, especially when combined with mashed potatoes, rice or bulgur.

Rabbit hearts have a delicate flavor, high nutritional value, and are rich in protein, making them not only tasty but also healthy.

Ingredients:

  • Rabbit hearts – 500 g
  • Onion – 1 large onion
  • Carrots – 1 pc.
  • Garlic – 2 cloves
  • Flour or starch – 1 tbsp. spoon
  • Butter – 20 g
  • Water or broth – 350 ml
  • Salt and black pepper to taste
  • Smoked paprika – ½ tsp. spoons
  • Optional – a pinch of dried thyme

Preparation:

  1. Rinse the rabbit’s hearts, remove any blood vessels, and pat dry with a paper towel.
  2. Melt the butter in a frying pan.
  3. Add the hearts and fry over medium heat for 5-7 minutes until lightly browned.
  4. Add chopped onion, grated carrot and garlic. Simmer together for another 7-8 minutes until the vegetables are tender.
  5. Pour water or broth into a separate bowl, add starch or flour of your choice, and mix until smooth. Pour the homogeneous mass into the pan with the hearts and vegetables, sprinkle with smoked paprika, and stir to distribute all the ingredients evenly.
  6. Simmer under a lid over low heat for 25-30 minutes until the hearts are tender and the sauce is thick.
